DESCRIPTION COLOFAA40 is an α-amylase produced by a selected strain of Aspergillus oryzae. The enzyme is capable of rapidly hydrolyzing the interior (α-1,4 glucosidic) linkages of gelatinous starch, amylose, and amylopectin solutions yielding soluble dextrins with small quantities of glucose and maltose which is more showing endo type. Prolonged starch hydrolysis with COLOFUNGAMYseries enzyme results in syrups with high maltose and low levels of glucose. COLOFAA40 also could be used inbake Industry.
